We made these at a friend's house during a baking day , and I must say I was surprised how delicious they were. I'm not a huge raisin lover (I'd rather have grapes), but these were creamy and delicious. We doubled this recipe and added some milk to make them softer. I'll post the recipe exactly as written, but feel free to make any changes you desire. Recipe courtesy of Better Homes and Gardens New Cookbook.
Ingredients:
3/4 cup butter
1 3/4 cups flour
1 cup brown sugar, packed
1/2 cup sugar
1 egg
1 teaspoon baking powder
1 teaspoon vanilla
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 cups rolled oats
1 cup raisins or 1 cup currants
Directions:
1. Beat butter for 30 seconds.
2. Add 1/2 cup flour, brown sugar, sugar, egg, baking powder, vanilla, and baking soda.
3. Stir in cinnamon and cloves and beat until thoroughly combined.
4. Beat in remaining flour. Stir in raisins or currants.
5. Drop by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.
6. Bake in 375 oven for 10 to 12 minutes or until edges are golden.
7. Cool cookies on a wire rack.
