A little bit of an unusual combination for a cookie that I find delicious. Time doesn't include chill time for dough.
Ingredients:
3/4 cup shortening
1 cup granulated sugar
1/4 cup molasses
1 egg
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ginger
1/4 teaspoon salt
1 cup raisins
sugar
Directions:
1. Cream shortening and sugar in a large bowl on medium speed of electric mixer until light and fluffy.
2. Add molasses and egg and mix well.
3. Combine flour, baking soda, spices, and salt and add to creamed mixture.
4. Mix well, and then stir in raisins.
5. Cover and chill for 1 hour for easy shaping.
6. Preheat oven at 350 degrees F.
7. Shape dough into 1 balls then roll in sugar to coat well.
8. Place on a greased cookie sheet and bake for 10-12 minutes or until set.
