Raisin Casserole Pudding

This is one of my all time favorite desserts that I make up if I want something fast and easy and guests have arrived 5 minutes ago! I have made it so often that I have it memorized and I can have it made up before the oven has completely heated up!! If there is any leftovers (and usually there isn't), my daughter will heat this up in the morning for breakfast. It is so convenient because all the ingredients can be found in the cupboard and fridge.
Ingredients:
1 cup flour
1/2 cup brown sugar
1/4 teaspoon salt
2 teaspoons baking powder
1 cup raisins
1/2 cup milk
1 1/2 cups boiling water
1 teaspoon vanilla
1 tablespoon butter
1 cup brown sugar
Directions:
1. Preheat oven to 350.
2. In a casserole dish, combine flour, brown sugar, salt, baking powder and raising. Mix well. Add milk and beat until well blended.
3. In a measuring cup, combine boiling water, vanilla, butter and sugar. Mix well. Pour boiling water mixture over a spoon into the casserole dish.
4. Bake for 30 - 40 minutes or until a toothpick comes out clean.
5. Note: I will make this up in advance and gently heat in the oven before serving. Serve with ice cream.
