Raisin Bread Pudding

Ingredients:

  • 6 slices of raisin bread
  • 1 tbsp butter
  • 1 cup of milk plus 1 to 1 1/2 cups
  • dash of salt
  • 3 eggs
  • 1/4 tsp five spice powder (or apple or pumpkin pie spice-this is a pretty forgiving recipe)
  • for serving
  • boiled cider or maple syrup , or equal parts of both
  • whipped cream

Directions:

  1. Cube or shred your raisin bread
  2. Use the butter to generously butter a medium, preferably ceramic, baking dish
  3. Break the eggs and whisk them with the 1/2 cup of sugar
  4. Add the salt and the five spice powder and incorporate them with the whisk
  5. Add the first cup of milk and whisk until the mixture is evenly blended and you do not see streaks of whites and yolks
  6. Pour the egg mixture onto the bread
  7. Then pour the additional milk slowly onto the bread, and press on the bread gently with the back of a spoon so that it absorbs the milk, until the bread is almost covered with liquid
  8. Sprinkle the reserved sugar over the top
  9. Bake at 350 for 50-60 minutes, or until the pudding is pulled away from the sides of the dish and it appears well set
  10. Serve with the syrup and the whipped cream
  11. This will make 4 generous helpings
