An easy, low calorie breakfast muffin. Very nice with homemade jam or honey.
Ingredients:
1 cup old fashioned rolled oats
3/4 cup whole wheat flour
1/4 cup wheat bran
1/3 cup raisins
1 teaspoon baking powder
1 1/3 cups buttermillk
1 tablespoon safflower oil
1 tablespoon honey
1 teaspoon vanilla extract
Directions:
1. Assemble all ingredients and utensils. Spray 12 muffin cups with nonstick cooking spray. In a large bowl combine the dry ingredients.
2. In a separate bowl combine the liquid ingredients.
3. Mix together just until the dry ingredients are moistened. Spoon the batter into the prepared muffin cups. The batter will be slightly liquid. Bake at 350 degrees Farenheit for 15 to 20 minutes.
