Raisin Bran Muffins

Ingredients:

  • 1 (15 oz) box raisin bran cereal
  • 3 cups buttermilk
  • 4 eggs
  • 5 cups flour
  • 2 tsp salt
  • 3 cups sugar

Directions:

  1. Mix Raisin Bran, flour, sugar, soda, and salt in a large bowl.
  2. Add eggs, oil, and buttermilk. Mix well.
  3. Cover and place in refrigerator for at least one hour.
  4. Place scoops of mixture into greased muffin tins
  5. Bake at 400°F for 15-20 minutes.
  6. Brush tops of muffins with melted butter.
  7. Enjoy.
  8. Small batches can be made at a time or made fresh each morning for breakfast.
  9. Mixture will keep for up to 6 weeks in refrigerator.
