Salads like this one are meant for summertime when you want things fast and easy. This is ideal for a summer barbecue or pot luck dinner. Grilled chicken can be added for an easy lunch
Ingredients:
2 cups broccoli, chopped
1 cup red pepper, diced
1 cup orange bell pepper, diced
1 mango, pitted and diced
1 cup celery, diced
1 cup carrot, diced
1/2 cup cucumber, diced
1/4 cup pumpkin seeds (optional)
1/2 cup mango chutney
3 tablespoons olive oil
1 teaspoon poppy seed
2 tablespoons onions, finely diced
pepper
Directions:
1. In a large bowl, combine all the salad ingredients.
2. Dressing: Whisk together ingredients for the dressing. toss dressing with salad.
