This recipe easily doubles. Serve it over grilled burgers, spoon it into tacos, or offer it as an appetizer with baked chips.
Ingredients:
6 large radishes, grated
1 large cucumber, peeled, seeded, and chopped
1/4 cup chopped fresh cilantro
1 garlic clove, pressed
1 tablespoon fresh lime juice
1/4 teaspoon salt
Directions:
1. Toss together all ingredients. Cover and chill up to 2 hours. Season with salt to taste.
2. Note: Nutritional analysis does not include salt to taste.
