Radish and Cucumber Salad

Another great summer salad, that can also be made any time of the year!! Delicious!!
Ingredients:
2 bunches red radishes, trimmed and sliced thin (about 20 radish)
1 english cucumber, peeled and sliced thin (halve slices if large)
1/2 large sweet onion, peeled and sliced thin
1 green bell pepper, seeded and cut into thin strips
1 1/2 cups fresh cilantro leaves or 1 1/2 cups flat leaf parsley, coarsely chopped
1 tablespoon fresh ginger, grated
1/2-3/4 cup rice wine vinegar
salt and pepper
Directions:
1. Chill vegetables before preparing. if possible. place prepared radishes, cucumber, onion, and green pepper, in a large bowl. Toss well., Cover and refrigerate while chopping cilantro and grating ginger.
2. Drizzle rice wine vinegar over vegetables, sprinkling cilantro and ginger on top and toss thoroughly to combine.
3. Serve chilled.
