Ingredients:
1 package (1/4 ounce) active dry yeast
1-2/3 cups warm water (110° to 115°)
2 tablespoons sugar
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon lemon juice
2 cups king arthur unbleached all-purpose flour
2 to 2-1/2 cups king arthur premium 100% whole wheat flour
heart-y blood sauce:
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
3/4 cup water
2 tablespoons olive oil
4 garlic cloves, minced
1 tablespoon finely shredded carrot
1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
toppings:
1 large green pepper, finely chopped
1 small sweet red pepper, finely chopped
1/4 cup finely chopped red onion
1 cup finely chopped fresh pineapple
1 cup finely chopped fully cooked ham
1/2 cup grated romano cheese
1/4 cup shredded italian cheese blend
Directions:
1. In a large bowl, dissolve yeast in warm water. Add the sugar, oil, salt, lemon juice and all-purpose flour. Beat until smooth. Stir in enough whole wheat flour to form a soft dough.
2. Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and rest for 10 minutes.
3. Meanwhile, in a small saucepan, combine the sauce ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until slightly thickened, stirring occasionally.
4. Roll dough into a 15-in. circle. Transfer to an ungreased 14-in. pizza pan, building up edges slightly. Do not let rise. Bake at 425° for 12-15 minutes or until lightly browned.
5. Spread sauce over crust. Top with peppers, onion, pineapple, ham and cheeses. Bake for 8-10 minutes or until cheese is melted and edges are golden brown. Yield: 12 slices.
