Quinoa with Black Beans and Cilantro

A slightly spicy side dish of quinoa and vegetables
Ingredients:
1 t canola oil
1 large onion, chopped
3 garlic cloves, peeled and chopped
3/4 c quinoa
1 1/2 c chicken stock
1 t ground cumin
1/4 t cayenne pepper
75 g corn
194 g black beans
1 large tomato, chopped
40 g cilantro, chopped
Directions:
1. Heat oil in a saucepan. Saute onion and garlic until lightly browned.
2. Add quinoa ,tomatoes, and chicken stock. Season with cumin and cayenne pepper. Bring to a boil, then reduce heat, cover, and simmer 20 minutes.
3. Stir in corn and beans and simmer until heated through. Stir in cilantro until wilted.
