1/2 cup quinoa
16 oz cooked black beans
1/2 onion
1 tomato
2 cloves garlic
1/2 cup chicken broth
2 tablespoons canola oil
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
1 teaspoon pepper
Directions:
1. heat oil in pan. saute onion and garlic. add cooked quinoa and blacks, then tomato and spices.
