Ingredients:

Directions:

  1. Saute chopped onions in olive oil. Add minced garlic, bell pepper, basil, and zucchini and cook for a few minutes.
  2. Add quinoa, salt, and water, cover and cook on low heat for about 10 minutes until quinoa grains bud open.
  3. Remove from heat.
  4. Mix together in separate bowl: Egg Beaters, milk, and cottage cheese, then add to quinoa and vegetable mixture.
  5. Pour into a 9 inch baking pan that has been sprayed with PAM.
  6. Top with Velveeta, and bake for 30 minutes at 350 degrees.
