Tabouli made with quinoa
Ingredients:
2 cups water
1/2 cup fresh lemon juice
1 cup quinoa
1/4 cup olive oil
3 medium ripe tomatoes
2 tablespoons fresh mint
1 1/2 cups parsley, coarsely chopped
1 cup cucumber, chopped
Directions:
1. Cook quinoa in water.
2. Mix with other ingredients.
3. chill well before serving.
