Quinoa Stuffed Peppers

Ingredients:
2 tablespoons olive oil
1 onion
2 celery ribs
1 tablespoon cumin
2 garlic cloves
10 ounces spinach
15 ounces tomatoes
15 ounces black beans
3/4 cup quinoa
3 carrots
1 1/2 cups monterey jack pepper cheese
4 bell peppers
Directions:
1. Cook onion and celery; add cumin & garlic. Stir in spinach, tomatoes, beans, quinoa, carrots and 2 cups water. Cook until quinoa is tender. Add 1 cup cheese.
2. Preheat oven to 350°F Fill each pepper with mixture, cover with foil and cook 1 hour. Uncover, sprinkle with remaining cheese and bake 15 minutes.
