Ingredients:
1 1/2 cups water
3/4 cup uncooked quinoa
1/4 cup minced red bell pepper
1/4 cup chopped green onions
3 tablespoons fresh lemon juice
1 1/2 tablespoons olive oil
1/2 teaspoon kosher salt
1 1/2 teaspoons honey
1/4 teaspoon black pepper
1 ripe peach, pitted and thinly sliced
Directions:
1. Bring 1 1/2 cups water to a boil in a medium saucepan. Add quinoa to pan; cover, reduce heat, and simmer 20 minutes. Cool quinoa slightly. Stir in bell pepper and remaining ingredients.
