Quinoa Salad
Ingredients:
1/2 cup quinoa
1 cup vegetable broth
2 tbsp lemon juice
2 tbsp olive oil
1/6 white onion, chopped
2 cloves garlic
2 tbsp parsley, chopped
3/4 cup black beans
Directions:
1. Cook Quinoa in Vegetable Broth
2. Mix remaining ingriedients as a dressing and stir into quinoa and black beans
