Quinoa Salad

Healthy and complete. It can be also prepared with couscous.
Ingredients:
1/2 cup quinoa
1 cup water
3/4 cup green beans
1/4 cup peas
2 carrot
8 cherry tomatoes
1/2 small green pepper (or red pepper)
1/4 cup parsley (or basil,etc.)
1/4 cup walnuts
1/2 cup chickpeas
5 black olives
2 tbsp lemon juice
1/4 cup olive oil
1/4 tsp salt
1 fresh ground pepper
2 (minced) clove garlic
Directions:
1. Prepare the quinoa with the water following the package directions and let it cool.
2. Cut the vegetables in small pieces and add to the quinoa.
3. Prepare the dressing with the lemon juice, the oil and all the other ingredients, mix well and add to the quinoa salad.
