Quinoa was held sacred by the Incas and they referred to it as the mother of all grains. This recipe is from Cafe Shi in Ames, Iowa
Ingredients:
2 cups mixed greens
1/4 cup vinaigrette (any kind)
1/4 cup red onion, diced
1/4 cup red pepper, diced
1/4 cup yellow pepper, diced
1/4 cup mushroom, diced
1/2 cup quinoa, cooked
olive oil
butter
salt and pepper, to taste
rosemary, to taste
thyme, to taste
Directions:
1. Toss greens with the vinaigrette and let set.
2. Saute onion, peppers, and mushrooms in a small amount of olive oil and butter.
3. Salt and pepper, to taste.
4. Add quinoa, sprinkle with rosemary and thyme.
5. Pour over greens and serve.
