Quinoa cooked with stock and onions
Ingredients:
1 cup quinoa
1 tbsp canola oil
2 cups beef stock
1 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
Directions:
1. Rinse quinoa well in several changes of water until water is clear.
2. Saute onion in oil.
3. Add quinoa and saute for a minute or two.
4. Add stock.
5. Bring to a boil and simmer for 20 minutes until liquid is abosrbed.
