Ingredients:
28 oz tomatoes, diced
2 onions, diced
2 bell peppers, diced
2 cloves garlic, minced
1 tbsp olive oil
1/4 cups quinoa
1 1/2 cups lentils
14 oz garbanzo beans
14 oz pinto beans
28 oz vegetable broth
1 tbsp salt
1 cup kale, diced
3/4 cup corn, frozen
4 tbsp chili powder
1 tsp cumin, ground
Directions:
1. saute onions, garlic, and peppers. add in everything else except kale, change seasonings to taste. a few minutes before it's done, add in kale.
