Ingredients:
1 tablespoon(s) canola oil
1/2 whole(s) onion chopped
1 whole(s) zuccini choppped
1 whole(s) red bell pepper chopped
1 clove(s) garlic minced
1 low sodium chicken sausage (like trader joe's) sliced into 6 rounds
1/4 cup(s) dry quinoa
1/2 cup(s) low sodium chicken or veg broth
1 can(s) fired roasted tomatoes
1/4 pound(s) shrimp peeled and deveined
1 bunch(es) green onions sliced thinly
sea salt and pepper to taste
Directions:
1. Heat oil in large nonstick skillet over medium heat.
2. Add chopped vegetables, garlic and sausage to skillet and saute for about 5 minutes.
3. Add quinoa and toss to coat, about 2 minutes. Add broth and tomotoes and bring to a boil, then reduce heat and simmer, covered, for 10 minutes.
4. Add the shrimp and cover the skillet. Cook for another 5 to 10 minutes or until shrimp are opaque and cooked through. Top with green onions, salt and pepper.
