Ingredients:
2 cups vegetable stock
1 cup quinoa
1 19oz can of chickpeas, drained and rinsed
1 diced red bell pepper
1/3 cup dried cranberries
1/3 cup chopped walnuts
3 tbsp chopped fresh parsley
Directions:
1. Bring the stock and quinoa to a boil. Reduce to a simmer, cover and cook for 15 minutes.
2. In a large bowl mix quinoa and remaining ingredients.
3. Chill before serving.
