Quinoa Chickpea Pancakes

Ingredients:
1 cup chickpea flour
1 cup water
2 tablespoons tamari soy sauce
1/4 teaspoon cayenne
1 teaspoon ground cumin
3 tablespoons red onions, grated
1 cup red quinoa, cooked
1/4 cup olive oil, for cooking
Directions:
1. Whisk together chickpea flour, water, tamari soy sauce, cayenne, cumin, and onion.
2. Stir in the cooked quinoa and let stand 10 minutes.
3. Heat 2 tablespoons of olive oil over medium heat in a frying pan and add pancakes in 1/4 cup measures. Cook until dark golden brown, 1-1/2 to 2 minutes each side. Add more oil as needed.
4. Drain on paper towels.
5. Serve.
