Veggie casserole that can be made vegan
Ingredients:
1 cup quinoa
6 mushrooms, sliced thin
1/2 acorn squash, sliced
1 large onion, chopped
1 1/2 cup vegetable broth
1/4 cup shredded cheese (vegan if desired)
1 tsp salt
1 tsp pepper
2 cloves garlic
1 tbsp extra virgin olive oil
Directions:
1. Preheat oven to 350
2. In a large skillet, saute onion in olive oil 2-3 minutes
3. Add squash, garlic, mushrooms and saute another 3-4 minutes
4. Add broth, quinoa, salt and pepper and bring to boil. Cover and simmer for 10 minutes
5. Transfer to 9x9 baking dish or casserole
6. Mix in 1/2 the cheese
7. Cover the top with remaining cheese
8. Cover and bake 30-35 minutes
