Quinoa Black Bean Salad

A summer salad to break out from the potato salads and macaroni salads.
Ingredients:
1/3 c quinoa
1 c water
2 t olive oil
4 t fresh lime juice
2 t cumin
1 t corriander
4 t chopped cilantro
2 t minced scallions
1 15 oz can black beans, rinsed and drained
1 medium red onion, diced
2 c diced tomatoes (seeded)
1 c diced bell pepper
2 t minced fresh green chiles
salt and pepper to taste
Directions:
1. Cook the quinoa in the water until tender and fluffy (think rice).
2. Dice the cilantro, scallions, red onion, tomatoes, and bell peppers.
3. Add diced vegetables, beans, quinoa, and chiles to large bowl and mix well.
4. Mix cumin, coriander, olive, oil, lime juice, salt, and pepper and pour over salad. Mix through.
