Quinoa and Spinach Salad

Ingredients:
2 1/2 cups cooked quinoa
10 ounces fresh spinach
1 lemon
1/2 cup lemon juice
1/2 cup olive oil
poppy seed
Directions:
1. Cook quinoa according to directions, let cool.
2. Chop the spinach.
3. Peel the lemon and chop the lemon into small pieces.
4. Mix spinach with quinoa and lemon pieces.
5. Mix lemon juice and olive oil to make a vinaigrette.
6. Add vinaigrette and poppy seeds to spinach, quinoa and lemon pieces.
7. Salt and pepper to taste.
