A simplified version of the loempia my Oma taught me to make years ago. I apologize for the measurements, I was taught by sight.
Ingredients:
2 bags coleslaw mix
1lb chicken, cooked and cubed
3t oil
salt (to taste)
pepper (to taste)
garlic (to taste)
2t sweet soy sauce
1 pkg wanton wrappers
1 egg
Directions:
1. Heat oil in wok on medium heat.
2. Empty coleslaw mix into wok, heat until slightly tender, mixing often.
3. Add chicken, mix throughly.
4. Add salt, pepper, and garlic.
5. When everything is heated nicely and veggies are soft, add soy sauce. This gives it a little taste, should not change the color of the mix.
6. Set aside, let cool.
7. Scramble egg in a small bowl, take one wanton wrapper place in front of you with point towards your chest. Place a tablespoon of the mix close to the point. Roll point up, take side points and fold in, roll and continue until sealed. Set aside and repeat.
8. Deep fry rolls until golden brown.
9. **Can fry less and freeze for later**
