quick easy brunch for two or easy lunch for to take to work.........good served on white bread .,I like lettuce and side order of potato chips with a cold drink... hits the spot and is quick and enjoyable.
Ingredients:
4 eggs
2 tablespoons mayonaise
half tsp mustard
(relish and pimento optional)
Directions:
1. In 2 quart pot bring 2 half cups water to a rapid boil, add eggs .
2. Boil for 7 minutes, put eggs in cool water and ice set in freezer for 4 minutes. Drain water, peel egg shells.
3. Smash eggs in bowl with fork, take spoon add mayo and mustard. salt and pepper to taste.
4. ready to serve on bread ...Good with romaine lettuce
5. cold drink and potato chips...awww..hits the spot.
