Quick Walnut Mayonnaise

A wonderful mayonnaise to use for salads, fish, rice, potatoes, etc. Adapted from the Silver Palate cookbook.
Ingredients:
1 cup regular mayonnaise or 1 cup soy mayonnaise or 1 cup vegan mayonnaise
1/2 cup walnut oil
1 1/2 tablespoons fresh lemon juice
1 teaspoon dijon-style mustard
fresh ground black pepper, to taste
Directions:
1. Whisk all ingredients together in a bowl.
2. Cover and refrigerate until needed, Enjoy!
3. Great on salads, rice, potatoes, vegetables, fish, etc.
