Another recipe from my Publix Grocery Greenwise magazine. Easy to make and great for diabetics watching their carbohydrate intake. Use pre-package cole-slaw mix or shred your own. This might also be good using brocolli slaw mix.
Ingredients:
4 cups shredded cabbage, with carrot mix (pre-packaged coleslaw mix)
1 cup shredded red cabbage
2 medium organic apples, cored and coarsely chopped
3/4 cup dried fruit, mixed (cranberries, raisins, pineapple, etc)
1/4 cup chopped pecans, toasted
1 (6 ounce) carton organic low-fat vanilla yogurt
1/8 teaspoon ground nutmeg
Directions:
1. Toss together cabbage mixture, red cabbage, apples, dried-fruit bits, and pecans in a large mixing bowl.
2. For dressing, combine yogurt and nutmeg. Pour dressing over apple mixture; toss to coat.
3. Serve immediately or cover and chill for up to 8 hours.
