Ingredients:
1 lb strawberries, trimmed and halved
2/3 to 3/4cup sugar
2 tablespoons powdered fruit pectin
2 teaspoons fresh lemon juice
Directions:
1. Mash strawberries in a large bowl with a potato masher or a fork.
2. Stir together berries, sugar, pectin, and lemon juice in a 12-inch nonstick skillet and boil until slightly thickened, about 5 minutes. Transfer to a bowl to cool, then chill, covered, until ready to serve.
3. Cooks' note: Jam keeps, chilled in an airtight container, 2 weeks.
