Quick Skillet Bread

An easy way to make a great bread without turning on the oven. You can do this right on the stove top. Just remember to keep the heat low-to-medium, and a non-stick skillet never hurts! Enjoy! -Kn0x-
Ingredients:
1 tablespoon oil + 1 tablespoon butter (or) 2 tablespoons bacon fat
2 cups flour
2 1/2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups buttermilk--(don't use lowfat--you're needing a high fat here)
Directions:
1. In a heavy 12 inch skillet (pref non stick) heat 1 tablespoon of your fat.
2. Sift flour, soda and salt together.
3. Quickly stir in buttermilk until just moistened.
4. Place batter into the melted fat, spreading batter across pan.
5. Place lid onto skillet.
6. Cook bread, covered, over low to med heat for about 10-12 minutes.
7. Lift one side of the bread gently, with large turner, and flip.
8. Add remaining tablespoon of oil to skillet before the final flip.
9. Continue to cook other side for 10-12 minutes,
10. Cut into wedges and serve with your favorite butter and condiments.
