Quck, easy and very tasty Italian dressing. This is great to dip raw veggies in, mix into pasta, pour over roasted veggies, use as a marinade, etc etc. AND it's low sodium unless you want to add salt to it or add lots of Romano cheese. Read more . If you put it on veggies and/or pasta it will still be low in sodium as most pasta I've seen doesn't have any sodium.
Ingredients:
1/2 cup extra virgin olive oil
1 tsp to 1 tbsp apple cider vinegar (organic, unfiltered, unpasterized, the kind with the floaties in it)
1 tbsp italian seasoning (oregano, rosemary, basil, etc.)
1 tsp garlic powder
1 tsp onion powder
1 - 2 tbsp grated romano cheese
optional - salt to taste (i use sea salt)
Directions:
1. Throw it all together in a small container and shake well until it's blended. The measurements above are just estimates. I never actually measure anything so it's easily adjusted to taste.
2. If you put it on pasta be sure to stir it in while the pasta is still hot and let it sit there for about 10 minutes or so. The flavor of the Apple Cider tends to blend into the rest of the ingredients over a little bit of time and tastes much better.
3. I have found that olive oil doesn't really like to be in the fridge so I always make this fresh. Lately I've been having a late night crunch-fest dipping celery in this (with extra romano added) :) Yumm. And a lot better for me than a big bag of chips or cheese puffs!!
