dont ya just love chinese food???? i have a odd liking for asian based meals anyday......love it! so this is a quick and simple egg frid rice recipe that i would have for breakfast-YES!!!! during the weekends when im out doing garden chores or major cleaning. Read more . super tasty
Ingredients:
3 cups of leftover cooked rice(you dont need that much, but thts what we normally have)
2 tsp minced garlic
2tsp minced ginger
1 thai chilli(can you tell i like hot food )
1/2 onion chopped
1 cup frozen mixed vegetables
2 large eggs(beaten well till light in color)
optional
1 1/2 tbsp dark soy sauce( please read further)
3 tbsp oyster sauce
Directions:
1. break your leftover rice apart....you should have mostly dry, loose grains of cooked rice
2. heat a wok on high heat and add 1 tsp of vegetable oil(sesame or peanut is good to). move oil around with your spoon to coat wok nicely
3. add your ginger, garlic, thai chilli, onions and frozen vegetables, and fry for about a minute to brown slightly and remove from wok(just pour it over your rice)
4. add 2 tsp of oil to your wok again and add eggs, let eggs puff up slightly and with your spatula break apart till almost done
5. add your rice and cooked vegetables and stir fry for another 2 minutes till rice its nice and cooked thru.
6. add salt to your liking and taste preference....
7. optional, after you add the rice, you could stir everything to mix it all up, then add the soy sauce and oyster sauce, and stir fry for about 3 minutes, adding 1tsp of oil to coat the rice nicely. also please be mindful that dark soy sauce is extremely salty......so reduce as needed according to the rice quantity, the color will come from the oyster sauce.
8. serve piping hot, garnish with green onions or chopped cilantro!
