1 large sweet onion, chopped
1 (12 ounce) package veggie crumbles, i use morningstar
2 tablespoons vegetable oil
4 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon salt
1 (14 ounce) can low sodium chicken broth
2 (14 1/2 ounce) cans rotel tomatoes, original
1/2 cup dark beer
3 tablespoons hickory flavored barbecue sauce
1/4 cup brown sugar
1 (6 ounce) can tomato paste
Directions:
1. Rinse and drain 2 cans black beans; do not drain third can.
2. Saute chopped onion and burger crumbles in hot oil in a large dutch oven over medium heat; about 6 minutes.
3. Stir in chili powder, cumin, salt and pepper; saute one minute.
4. Stir in drained and undrained beans, chicken broth, rotel tomatoes, beer, bbq sauce, brown sugar and tomato paste; reduce heat to low and simmer for 10 - 15 minutes.
