Quick & Easy Sometime Veggie 'chicken & Mushroom' Stir-F

This is a quick and simple recipe I throw together if I want a quick snack or if we are eating something too old for our two year old daughter or if she doesn't like what we're eating even! Its a big hit with my whole family and it is so quick, simple and cheap to make, and it can either be vegetarian or you can add meat! Whatever you fancy! You can use Quorn pieces or you can use real chicken and maybe bacon pieces and you can also substitute the noodles with linguine cooked in chicken stock. We're not vegetarians (we just love the ease of the Quorn pieces) so this isn't a recipe aimed at those who are, but rather a way to have a quick easy stir fry in about 10 minutes. Ingredients:
1 cup vegetarian chicken substitute, quorn brand
chicken-flavor oriental noodles
1/2 cup baby button mushroom
4 baby corn cobs
4 spring onions
1/2 cup small broccoli
1/2 cup sliced carrot
1 garlic clove
1 tablespoon sesame seeds
1 tablespoon sesame oil
1 tablespoon meat free oyster sauce
1/2 tablespoon plum sauce
1 teaspoon light soya sauce
200 ml water
Directions:
1. Cook your instant noodles according to the package instructions using the flavoured sachet inside and the 200ml water in a pan until the noodles are soft.
2. Add the oil to a large wok or frying pan and add garlic and sesame seeds at this point.
3. Throw your Quorn 'chicken' pieces into the wok (you can use real chicken or I sometimes throw in sliced bacon too).
4. While the noodles and soya are cooking, chop the spring onions, mushrooms, corn cobs and toss these along with the carrots and broccoli into the wok and let them sizzle away in the oil, garlic and seeds, shaking the wok every minute or so to prevent sticking. Do this for about 5 minutes.
5. Add the oyster, plum and soya sauce and stir, then throw in the noodles and stir them around the vegetables.
6. Serve with crusty bread and butter for a nice simple finishing touch and quick snack!
