Quick Easy Chunky Vegetable Soup

This is a quick delicious soup. A quick version of a slow cooked beef vegetable soup. My kids love this soup. Since it makes so much I freeze individual serving bags for the family. What a simple quick lunch, just grab one out and pop it in the microwave.
Ingredients:
2 pound ground chuck
1 small sweet onion, chopped
1 tsp. salt
1/2 tsp. pepper
3 (14 oz.) cans low-sodium beef broth
3 (29 oz.) cans mixed vegetables with potatoes, rinsed and drained
3 (14 1/2 oz.) cans diced new potatoes rinsed and drained
1 (15 oz.) can sweet peas with mushrooms and pearl onions, rinsed and drained
2 (26 oz.) jars tomato, herbs, and spices pasta sauce
1 (14 1/2 oz.) can diced tomatoes with sweet onions
Directions:
1. Cook ground chuck and onion, stir until meat crumbles and not longer pink
2. drain well
3. Stir in salt, pepper, and beef broth
4. bring to a boil
5. Stir in mixed vegetables, and remaining ingredients.
6. Bring to a boil
7. cover, reduce heat and simmer at least 20 min. or until thoroughly heated
