Ingredients:

  • 2 1/2 cups raisins
  • 1 cup water
  • 1 cup applesauce
  • 1/4 tsp cinnamon
  • 2 cups rolled oats
  • 1/2 cup sugar
  • 1/2 cup coconut
  • 3/4 cup margarine or 3/4 cup butter

Directions:

  1. In medium saucepan, bring raisins and water to a boil.
  2. Reduce heat; simmer 15 minutes.
  3. Drain; stir in applesauce, lemon juice and cinnamon.
  4. Set aside.
  5. Heat oven to 350*F.
  6. In a large bowl, combine oats, flour, sugar and coconut.
  7. Using pastry blender or fork, cut in margarine until mixture resembles coarse crumbs.
  8. Reserve 2 1/2 cups of crumb mixture for topping.
  9. Press remaining crumb mixture firmly in bottom of ungreased 13x9-inch pan.
  10. Spread evenly with filling.
  11. Sprinkle with reserved crumb mixture; press lightly.
  12. Bake at 350*F.
  13. For 30 to 40 minutes or until light golden brown.
  14. Cool completely.
  15. Cut into bars.
  16. Yield: 36 bars.
