I got this from a Country Cooking booklet. It looks easy and tasty. It uses crescent roll dough instead of a pie crust.
Ingredients:
1 1/4 lbs lean ground beef
1 (1 1/4 ounce) package taco seasoning mix
1/2 cup water
1/2 cup salsa
1 (8 ounce) can refrigerated crescent dinner rolls
1 1/2 cups crushed corn chips, divided
1 cup sour cream
6 slices american cheese
shredded lettuce (optional)
sliced ripe olives (optional)
diced tomato (optional)
Directions:
1. Brown meat in a large skillet, drain. Add seasoning mix, water and salsa. Simmer for 5 minutes.
2. Spread the crescent roll dough in a 10 pie plate to form a crust, press the edges together at the seams. Sprinkle 1 cup corn chips over the crust. Spoon the meat mixture over the chips. Spread sour cream on top. Cover with cheese slices and sprinkle on remaining corn chips.
3. Bake at 375 for 20 minutes or until crust is golden brown. Serve with lettuce, olives, tomatoes and more salsa if desired.
