Quick Chicken and Corn Chowder

Ingredients:
2 tablespoon(s) olive oil
4 whole(s) scallions thinly sliced
1 whole(s) green bell pepper diced
8 ounce(s) red skinned potatoes unpeeled and finely diced
1/4 cup(s) plain flour
1 cup(s) chicken stock
1/2 teaspoon(s) salt
1/4 teaspoon(s) cayenne pepper
1/4 teaspoon(s) dried thyme
1 2/3 cup(s) canned creamed corn
1 1/2 cup(s) diced cooked chicken breasts
1/2 cup(s) thick cream
Directions:
1. In a large saucepan, heat oil over medium heat. add scallions, bell pepper and potatoes and cook for 5 mintues, or until bell pepper is crisp-tender. add flour stirring to coat.
2. Stir in stock, slat, pepper, thyme and 1 cup water, bring to a boil. reduce to a simmer and cover and cook for 5 mintues or until potatoes are tender. stir in corn, chicken and cream, return to a boil to heat through. serve immediately.
