This carrot bread is really good. Those that like carrot cake will probably really appreciate it.
Ingredients:
1 3/4 cups whole wheat flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp salt
1 cup carrots, shredded
1/2 cup skim milk
2 tbs applesauce
1 large egg
Directions:
1. IN a large bowl stir the whole wheat flour, baking soda, cinnamon, baking powder, and salt together.
2. In a small bowl stir together the carrots, milk, applesauce, and egg.
3. Pour the carrot batter into the dry mix and stir well.
4. Pour batter into a sprayed 8 loaf pan.
5. cook at 350 for about 65 minutes.
6. Cool for 10 minutes before removing from pan.
7. Bread will cut much more easily if you wait until it is completely cooled on a wire rack.
