Quick Blackeye Peas

For as long as I can remember, there's never been a question of What's for dinner on Jan. 1: Blackeye peas (aka hoppin' john), Greens, Cabbage, and Cornbread. Over time, I've tweaked a couple of things & put my own spin on this traditional West Virginia meal, even when I lived in CA, MI, and OH! Read more ! (This recipe is quick because there's no sorting, cleaning, or soaking the dry peas...they're frozen!)
Ingredients:
1 bag frozen blackeye peas (16 oz)
1/4 c olive oil
1 small onion, chopped
1 bell pepper, chopped
1 clove garlic, crushed
1 smoked turkey wing (i use the drumstick part)
1/2 c water
1 t crushed red pepper flakes
1/2 t sugar
1/2 t sea salt
1/2 t black pepper (optional
Directions:
1. In a medium saucepan, bring the 1/2 cup of water to boil.
2. Add turkey wing & let it boil two minutes
3. Reduce heat & simmer 15-20 minutes or until meat falls from the bone
4. While the turkey simmers:
5. In small saute pan, heat the olive olive
6. Add the chopped onion, bell pepper, and garlic; saute until soft & transluscent..remove from heat.
7. Remove the turkey & separate it from the bone..
8. Add the peas to the 'broth', and add the turkey
9. If needed, add enough water to cover them.
10. Add the saute'd onion, bell pepper, and garlic.
11. Boil for 3 minutes.
12. Reduce heat, cover & simmer for 35 minutes.
13. Stir in the seasonings (red pepper flakes, sugar, sea salt, pepper)
14. Cover again & let it simmer another 5-10 minutes (you can add more water if needed)
15. Remove from heat..it's been my experience that the longer it sits , the more it'll thicken. Serve over rice, if desired.
