quick low fat bean soup
Ingredients:
2 (15 ounce) cans black beans
3/4 cup diced onion
1 jalapeno
1 garlic clove, minced
1 teaspoon cumin
1 teaspoon vegetable oil
1 cup low sodium chicken broth
1 medium tomato, diced
Directions:
1. saute onion, jalepeno and garlic in oil till fragrant. Add cumin and stir till fragrant. Add tomato.
2. add one can on black beans and 1/2 cup broth.
3. bring to simmer and let simmer till tomato starts to break down.
4. Puree 1/2 of soup in blender and return to pan add other can of black beans and heat through.
5. garnish with sour cream and avocado.
