Quick And Easy Pumpkin Soup

A quick and easy pumkpin soup, just like what grandma used to make. Perfect for lunch on a winter day.
Ingredients:
1kg pumpkin
3 cups water
2 teaspoons instant chicken stock powder
2 teaspoons instant green herb stock powder
2 teaspoons sugar
1/2 teaspoon grated nutmeg
2 large onions ( peeled and quartered )
2 cloves garlic
1-2 cups skim milk
2 teaspoons finely chopped parsley
Directions:
1. Cut the pumpkin into 6 to 8 pieces, with skin off.
2. Place in a large pot with water, seasoning, onions and garlic.
3. Cover and cook briskly until pumpkin is soft.
4. Puree punpkin, onion etc in a mouli.
5. Thin the puree, with milk, to the thickness you like.
6. Reheat and serve with a little chopped parsley on top.
