Due to the hot Florida summers eating can be a chore. So I came up with a quick refreshing salad to beat the heat
Ingredients:
1-2 ripe haas avocado
2-3 plum tomatoes diced
1/3 cup diced red onion
1-3 key limes or 1 lime
1-2tbsp chopped cilantro
pinch coarse black pepper
kosher salt- to taste
red chili flakes- to taste
this salad is mostly done to taste that's why the varied numbers of ingredients. some people like a strong lime and cilantro flavor while others like more avocados. this is only meant for a general reference so play around with the recipe and enjoy. one spin off is to add some lemongrass paste to the lime juice for a extra kick
Directions:
1. Cut the Haas in half remove the peel and thinly slice the halves. After slicing quarter the slices in to bit size chunks. Place into salad bowl.
2. Cut the Plum tomatoes in half and scoop out the seeds and the placenta. Then dice and place in bowl with chunked Haas
3. Dice the 1/3 cup of red onion and place in bowl with the other ingredients
4. Finely chop the Cilantro and sprinkle (in increments) and mix the ingredients together in the bowl
5. Roll the limes on the counter to bruise them for juicing. Squeeze over the mixture in the bowl
6. Now add the salt, pepper and chili flakes to the bowl and mix throughly. You are now ready to serve. You always want to make this right before serving due to the Avocado's tendency to brown quickly.
