Spinach Quiche
Ingredients:
3/4 cups egg substitute
8 oz carnation evaporated milk
1 pinch of nutmeg
1/8 tsp pepper
1/4 cup swiss cheese, grated
2 tbsp butter
2 tbsp green onion, finely minced
1 1/4 cups frozen spinach, chopped
1/2 tsp salt
1 pie crust, ready-to-bake
Directions:
1. Beat the eggsand evaporated milk and seasonings into a mixing bowl to blend. Set a side. Cook the green onion for a moment into the butter. Add the spinach and stir over moderate heat for several minutes yo evaporate all its water. Stir in salt, pepper, and nutmeg and taste carefully for seasoning. Gradually stir the spinach into egg and milk. Pour into pastry sheel, sprinle with cheese, dot with butter, and bake for 25 to 30 minuyes in pre-heated 375 deg. oven.
