Ingredients:

Directions:

  1. Preheat oven to 400
  2. Cook chorizo on stovetop until almost browned; drain; set aside
  3. Dice tomatoes, jalapenos and cilantro while chorizo is cooking
  4. Place cheese in an oven-safe dish, cutting in pieces to fit the bottom of the dish (cheese will melt and cover the bottom once it goes into the oven)
  5. Place cheese in the oven for approximately 7 minutes or until cheese is almost thoroughly melted
  6. Remove from oven, top with chorizo and return to oven for another 7 minutes
  7. Warm tortillas in microwave
  8. Remove cheese from oven and serve immediately
  9. Queso fundido is best eaten in a warm tortilla with some tomatoes, jalapenos, a bit of cilantro and a squirt of lime - enjoy!
