Queso Con Chorizo Y Poblanos

Put together this queso in a crock pot for an office pot luck recently and received quite a few compliments. I love the fact that the recipe uses real cheese, not the processed stuff.
Ingredients:
3 lbs monterey jack cheese, shredded
1 lb mild cheddar cheese, shredded
5 tablespoons cornstarch
1 lb chorizo sausage
4 poblano peppers, roasted
2 bunches green onions
1 head roasted garlic
1 (14 ounce) can vegetable broth
1 (12 ounce) can 2% evaporated milk
Directions:
1. Brown the chorizo and drain thoroughly.
2. Roast, peel and dice the poblano chiles.
3. Lightly sautee the green onions to wilt.
4. Combine the broth and milk in a large microwave safe bowl and heat in the microwave until very hot.
5. In a separate bowl, toss together the corn starch and cheese (I cheated and bought the pre-shredded cheese then just put the corn starch in the bag and shook it together).
6. Gradually begin to add the cheese, a cup or so at a time. Stir to combine after each addition.
7. After all of the cheese is combined, add the chorizo, poblanos, green onions and garlic.
8. Stir to combine.
9. Put in the crock pot on Warm setting and stir as needed.
