Happy Victoria Day everyone! Victoria Day is observed in Canada in memory of Queen Victoria's birthday. It marks the first long weekend of the warmer months. My granny use to make these dainty little cakes which are sweet, dense and full of currents and dried cherries. Read more . They are wonderful with a cup of tea or coffee.
Ingredients:
1/2 c butter softened
1/2 c sugar
3 large eggs, beaten
1/4 c milk
1 tsp vanilla extract
1 tsp lemon zest
1 3/4 c cake flour
1 tsp baing powder
1/2 tsp salt
1/3 c currants or chopped apricots
1/2 c glazed cherries
Directions:
1. Cream butter and sugar until volume has increased.
2. Beat in egg one at a time.
3. Add milk, lemon peel and vanilla.
4. Add in flour, baking powder, salt, currents and cherries.
5. Grease and flour 24 mini muffin tins.
6. Divide batter evenly and bake at 375 degrees for 12 to 15 minutes until tester toothpick comes out clean.
7. Cool, serve with cream or jam.
